Nutella, you stole my heart

It’s a nice quiet Wednesday here in the Iowa City.

I had a fiction piece due for my Creative Writing Workshop class so I spent all Monday and Tuesday nights working on it. I’m glad the piece is all turned in, but it’s not as polished as I would have liked for workshop. Oh well, I’ll see how it goes next week.

After I got done with class today, I went to the CRWC and did some cardio. It felt really good to be working out again. The first ten minutes were just awful, but after that I started to feel really good and I didn’t want the workout to end! Maybe I’m starting to turn the corner and whip this butt into shape.

I came home and wolfed down some vegetables. Yummy. Then something was calling to me….

It sat in my cupboard, and I knew all I needed was a spoon….

And it would be mine…

And it would be chocolate….

Lasagna

As I write this post, I’m eating some leftover lasagna…yumyumyumyum!

Lasagna seemed pretty easy to make, and I wanted to add a little bit of challenge. My goal for each week is to try something new and to be as fresh as possible, while still making a convenient.

This time, I decided to make my own marinara sauce. I have never done this before, and had been wanting to try it out for awhile. Like most things cooking, I was more than a little intimidated, but really, there was no need.

Crêpes and Nutella!!!

On Friday, I once again found myself in the extremely strong grip of a cooking bug. All week I had been planning out this meal, but dessert kept evading me. I had read and read about lasagna and had decided on which one I wanted to cook, but I had no idea what I was going to do for dessert.

I was thinking, maybe cookies, or dirt or just redo the oatmeal raisin bars that I made the week previous?? My thoughts were all over the place.

However, I felt as though I needed something delish. Something super yummy and not so healthy. And then I stumbled upon a recipe that was simple, used all ingredients I had on hand (except one!) and I could whip up in advance.

Swimming, Partying, Studying

Ahh, what a lovely weekend!

Last Friday, Mr. Jeff and I hung out before he had some crazy math competition on Saturday/Sunday. Basically they did math for twenty four hours straight! It sounded absolutely horrible to my ears, probably because I’m an English major. Since he was going to have a big weekend, we kept it chill and ventured to the new Campus Recreation and Wellness Center to go swimming . It just opened last August, and we hadn’t had a chance yet to check out the pool, which includes a lazy river and a twenty person hot tub. Continue reading

Chocolate Caramel Brownies

This afternoon, I whipped up a batch of Chocolate Caramel Brownies. They are absolutely decadent and in no way healthy. Its basically a bunch of butter, caramel, and cake mix. These brownies are my absolute favorite treat. The recipe comes courtesy of my mama.

Chocolate Caramel Brownies

Ingredients:
1 Box German Chocolate Cake Mix
3/4 cup melted butter
1 small can of evaporated milk
two handfuls chocolate chips
1/4 cup pecans (optional)
1 package caramels

Fall Beauty

 

Last night was the most fun my Thursday nights have been all semester! I helped one of my good friends, Katie, purchase a camera at Best Buy (I recommended Best Buy after my camera fiasco Wednesday) and she picked a super awesome camera.

Before I met up with her, I went for a walk/run. I’m definitely no marathon runner, but I pushed myself yesterday and I’m feeling the burn today. It was an absolutely beautiful fall day, and I headed out just as the sun was beginning to set, bathing the world in golden hues. The beginning of my walk:

Wednesdays are for Working!

What a busy day it has been!

I had so much fun messing around on my blog last night that I put off my creative writing paper forever, so I was up way late working on that.

I woke up around ten and had to finish some last minute homework. I might be an English major, but I absolutely hate my creative writing class.

Then it was off to work from noon-2:30. I work in Admissions at the University, and I answer phones, schedule visits for prospective students, greet visitors and other clerical work. October is our busy season because all the high school seniors are trying to figure out what they are doing next year. So we were swamped this afternoon, and there was no facebook goofing off for me.

It’s You and Me Against The World, Babe

For my first post, I thought I would share the story of how I arrived at sharing my life with my cat, Belle.

Last Thanksgiving, I went home for the week, like all good college students. While there, I spent some time talking with my father about my desire to have a cat. I had been watching Cats 101 on Animal Planet, and told him that I dreamed of one day owning a Russian Blue cat.

I described my reasoning, “I just want a cat who will be mine. Someone to love me when I get home at the end of day. I want someone to play with. After leaving home, you don’t have a family to rely on anymore, and until you get married, you don’t really have that. Either way, it’s not the same as when I was a kid. Also, Russian Blue Cats seem awesome!”

He told me then that my mom and him had been looking at buying a Russian Blue cat while we were younger. We ended up receiving a cat who needed a home when her owner had to move to the old neighbor home. That cat, Tipper, was an amazing pet who is still kicking at 20 years!

After this conversation, I thought it was over. I knew I couldn’t afford a cat in college, and I also understood that it would be majorly irresponsible to own a cat when I didn’t know if I could keep the pet after I graduated. I had (and still have) no idea of where I’m going to end up.

Fast forward a month to the Friday of finals week….
